Pork tenderloin ideas? Crockpot? Freezing meals for later?

I'm alone for the month. Cooking for 1 is not fun. Today, I bought my first pork tenderloin. We usually buy boneless pork roast & cook it in the rotissiere with a rub on it.

I'm looking for a way to cook this in the crockpot. Keeping it simple. Not BBQ, I have a recipe I use ribs for that.

I also want to be able to slice it up when cooked & freeze it into portions for me later.

Ideas?

I'll be alone next year too and this cooking for single people is all new to me. I don't want to be eating take out or convenience food for a year.

Also I'm trying to eat healthier & continue to lose weight.
 
Mix up a can of golden mushroom soup and a can of french onion soup and pour over the top of the loin in your crock pot and cook on low all day. Makes a very yummy gravy and the pork is so moist and tender and you can put it in a container and freeze leftovers for a future meal! Pare it with instant mashed potatoes or real ones or rice. Yummy stuff!
 
I use a dry rub and cook it on the grill. You can then slice it in small sections and freeze some for later.
 
I have an easy recipe - one bottle of Italian dressing and the pork! Cook on low for 5-6 hours.

With the crock pot cooking you are looking at it probably shredding upon removal. I just did one last week and shredded it - ate half, froze half. You can do a variety of dinners with shredded pork too.
 

stab it all the way around (maybe 10 -15 times) and stuff with garlic cloves. Bake at 325 until it reaches 110 degrees, increase temp to 425 and cook to 145 degrees. Wrap in aluminum for 15 minutes. Moist and wonderful. Nicely flavored also.
 
This is best and easiest recipe I've ever found for pork tenderloin. Marinate it in 1/2 c. balsamic vinegar, 1/2 c. olive and 2 T. Canadian steak seasoning for at least 8 hours. Cook it in the crock pot or in the oven with the marinade. It's awesome! We made one on the grill last weekend, and it was wonderful, too!:thumbsup2
 
So many options. I might have to go buy more pork. Thanks. I'll see what ingredients I have on hand so I don't have to make another trip to the store.

I'm learning to use the grill as that is DH's job. We have a nice new grill. What temp & how long per pound would you think to cook it at?
 
I wouldn't put a pork tenderloin in the crock pot. Pork loin or roast, yes, but not tenderloin.

I'd cut the tenderloin into pieces enough for a meal or two. Then I'd marinate and freeze. You can grill, or roast in the oven. If it's a small piece you are cooking, it won't take long at all to cook. Tenderloin should be cooked just slightly pink (not red, and not gray...just a little on the pinkish side).

Or, you can cook the entire thing and then use for sandwiches. I make a Cuban sandwich with leftover pork tenderloin.

My favorite marinade comes from a bottle. It's Wegman's Rosemary Balsamic, and it is SOOOO good!!

I agree. I use the crock pot for meat that needs to slow cook to be tender. Pork tenderloin doesn't fall into the category.

I marinate in equal parts of French and Italian dressing mixed with some soy sauce, brown sugar and garlic.
 
I remembered I had a chicken breast I was going to make for myself for dinner on the indoor grill. I decided to learn how to fire up the grill & cooked the chicken AND the pork tenderloin. :goodvibes

Already sliced up & in the freezer. :thumbsup2 I'll have some tomorrow for dinner.

I 2nd the question from the OP. Pork Tenderloin was on sale B1G1 at my local grocery store, so.. I did :) Now I need to figure out what to do with them. I too, live alone and am on a diet. Please keep the recipes/ideas coming!

This sounds yummy! Does it shred after being in the CP that long or does it keep its shape? What do you serve with this?

Pork tenderloin is my go to meal when I want something fairly quick. It is really easy the way I make it. All I do is rub olive oil and some minced garlic on it. Then I salt and pepper. Roast at 400 for about 20-25 minutes. It's done.

I use leftovers for sandwiches, sometimes plain and sometimes with barbecue.

The trick is to not overcook it, or it dries out.
 
We just had pork tenderloin last night. It's a family favorite around here. This is what I do to fix it:

-you need a pan that can go from the top of the stove into the oven.
-preheat oven at 450.
-put garlic powder, salt and Italian seasoning on a plate.
-roll the tenderloin in the seasonings
-put a little olive oil in the pan and preheat on top of the stove
-brown the tenderloin on all sides
-once the outside is just browned, put the whole pan in the oven
-set the timer for 10 minutes
-after 10 minutes, turn off the oven and set the timer for 25 minutes


Unless you get massively thick tenderloins, it turns out perfect every time. You can change the spice combination, but this is the one my family likes.
 
Don't confuse pork loin and pork tenderloin. I see no reason to put a tenderloin in the crockpot (and I don't even think it would taste good). Grill, or cook it in the oven.

I'm not confusing them. Like I said, I usually cook a pork loin or pork roast on the rotissiare. I know what they are. This was my very first pork tenderloin. I have never even eaten one before this. Don't even know why I thought of crockpot. I was just looking for easy ways & I'm trying to use crockpot more since its just me for a while.

There have been enough suggestions now that a tenderloin shouldn't go in a crockpot. I won't be using that method. :goodvibes

Oh, my comment wasn't directed at you! I think some who were giving you advice were thinking pork loin (which is great in the crockpot). Pork tenderloin is great, because it's tender, and cooks quickly.
