Pork Tenderlion New Years Entree'

Got to see the presentation of one of the dishes planned for New Years. It was the Pork Tenderlion. This was 2-1/2 to three inches thick with the bone still attached. The filet mignon of pork 3 inches thick, now that is a lot of meat. served with spinach and chedder mashed potatoes.

I was going back and forth between the Rib Eye and the Pork and i believe the pork will be my choice.
