I'll probably be trying them all, so this isn't really about which ones are worth at least checking out. I'm looking for the ones that you'll likely try to incorporate on nearly every visit. Doesn't matter that you can't really compare lunch at the Hot Dog Hall of Fame with a lunch at Emeril's - if the hot dogs are worth repeat visits, they're worth a vote.

Can vote for multiple places.

Any comments/reviews are appreciated. Like some comparisons also if you have them (Red Oven vs Sal's etc.) Have seen very little discussion about these new places.

Cowfish and Antojitos are definitely on the list for our next vacation, but Cowfish is #1.

I'm looking forward to trying Cowfish. There's one less than 15 minutes from my house, but I've never tried it because I thought it was primarily sushi. Now that I've seen the menu and some phenomenal photos of their dishes via Google, there's probably half a dozen things I want to try there.
 

We ate at Cowfish a couple of times, and I usually don't want to go back to the same place just because I like trying different restaurants. But we really loved it.

The crab Rangoon dip w/ fried wontons (drizzled with sweet chili sauce). It was delicious!
 
You also left out the Bread Box Handcrafted sandwiches.

Crap, that's actually another one I wanted to check out. I went off the CityWalk list on their website.

We were there in November and had dinner at Antojitos one night, and also did dinner and lunch at Red Oven. Red Oven was very good but is also QS, so keep that in mind. It got relatively crowded and a few people had difficulty finding seats. Antojitos was also good and not overly crowded in the restaurant. I wish the band would play more frequently - they were just finishing up a set when we got there and they didn't come back on before we left.

We thought about trying Cowfish but every time we walked by it looked dead. The Dis Unplugged Universal edition podcast just did a review of Cowfish and their consensus was that it was good, but service was very slow. If you care to listen, it's on their first podcast of the new year.

i wasn't wowed at any that i ate at.
not saying there were bad, just wasn't my thing.
 
I've been to Cowfish, Vivo and Red Oven.

Everyone loved Cowfish, everyone thought Red Oven was really good and only 1 out of 4 of us liked our dish at Vivo. Service and atmosphere were great at Vivo, but three of us really didn't like our food. I'll be going back to all but Vivo.
 
We haven't been to the others thus far, just Cowfish and Red Oven. We loved the food at Cowfish, and found the service friendly and fairly knowledgable, though not particularly quick. My husband was very impressed with Red Oven. I really wanted to like it, but thought the sauce was too sweet and the toppings in some cases were undercooked. It wasn't the worst I have ever had, but certainly not a favorite or one we are in a hurry to go back to. My sister, brother in law and parents went to Vivo this weekend, said it was only so/so, that the atmosphere was good, service was good, food was mediocre. Same sister went to Antojitos, said great atmosphere and service, terrific guacamole, rest of the meal was less than expected quality wise. She said it is very similiar to Latin Quarter.
