You know - things like
buy a drink, dessert, etc. around the world at EPCOT 
collect pressed pennies
take pictures posing in silly hats from the gift shops
take a picture by the sign for every ride/attraction
look for hidden mickeys
collect character autographs and/or photos
take photos of cast members costumes
take photos of weird footwear other guests are wearing
take photos of the flowers
collect fastpasses (you can print out the "not valid" ones for souvenirs)
make up a list of all the animals you could find on the Tree of Life at AK, then had a scavenger hunt in teams to find them
if you are going for a "celebration" like a birthday or anniversary, have CM's from other countries write it in their language
When we went to Epcot-world showcase we had CMs write mother and daughter in their language for us. It was inside one of those lil chunky notebooks. I wrote each country at the top of the page, then as they were writing the word I took a picture of them.
We also went on Hidden Mickey hunts while waiting in ride or resturant queues.
We listened to accents and tried to guess where people were from before looking at nametags.
We tried to find as many people from our state there.
etc.

Not that WDW's not fun without a "tiwst", but it's something extra to do.
