Plated vs. Action Stations

I know that it depends on your meal, but what is the cost difference? We are planning a very formal evening wedding and I have always wanted plated. But the action stations sound so appealing and will give our guests a wider variety. It seems like it would cost alot more than a basic plated dinner since there is so much more food. Any ideas?
