Planning...one night/morning at Disney

We just decided to stop in Orlando for one night on our way to Vero Beach. Now we are not going to the parks (dd does not like that idea) so I need to plan what we can do besides going to dinner. I would like to make it special since a park visit is not involved. Now we also have the next morning to also do something.
I would love to hear your ideas!

Because it is one night, we will be at Pop Century.
I have two dd's - 3 and 8 years old plus DH.
I really would like to see fireworks if possible.
 
It would help to know -

Where are you planning to stay?
How old is DD?
Are there others in your party?

In the meantime -

How about Cirque du Soliel? It's a great show for all ages.
Other dinner shows are a possibility - Hoop De Do, Luau
Mini-golf
Disney Quest
Shopping in Downtown Disney
Swimming at resort or pool hop somewhere else
There is nightly enteratinment on the Boardwalk
A tour? Not all require park admission, but many have age limits
Character breakfast at one of the resorts
Water sprite rental
Community Hall activities at OKW or BWV
 
I think the new Carriage Ride at SSR would be nice, if you plan on dining at DTD or staying there. SSR also has a community hall and the pool is open at night (unguarded) but no slides. The zero entry is great and the pool is warm.

You could also visit the MK resort area and watch the Fireworks and EWP.

Character dining.

A trip to Goofy's Candy shop at DTD is always fun too.
 
I would go to the Campground, eat at Trails End, then do the Movie and campfire. I think Chip and Dale still show up.

I have a similiar situation. I am going to be on business next week in Orlando. I have a 2 day park hopper but will have free time on Wednesday night and then plan to go to the parks on Thursday evening and Friday (taking vacation day). I'm planning on Downtown Disney and a trip to the Premium Outlets on Wednesday night.
 
How about going to the Polynesian (sp?) for dinner at Ohana's (where your kids can hula and have coconut races)? (If you need to take Disney transportation from your hotel, you could take the boat from MK to the Poly. After dinner, if there's time, walk the the path to the Grand Floridian and enjoy the lobby and grounds. Then either head to the GF boat dock or walk back to the Polynesian's beach and watch the fireworks at the MK over the water. (If you're not too full you could pick up a Mickey bar from the counter service restaurant at either resort on your way out to watch the fireworks.)

If you don't drive to dinner, there's a nice walking path from the Poly to the Ticket and Transportation Ctr, and you could take a pretty deserted Ferry from there to the (crowded) bus at MK back to your hotel. (Or take the monorail or the small boat - right near the beach - to MK.)
