Planning for a higher capacity weekend in November

Hi all! We are heading down November 11th for 9 days/10 nights. We have been twice before to WDW and have narrowed down our must do's. Because we are also planning our first trip to Universal (my boys are now huge HP fans and DH and I have been waiting for this opportunity) and LEGOLAND (before they get too old - they are 11), we will have 5 days at Disney with park hoppers (our first time for these). We are staying off-site.

Our 1st trip we went during the time of paper fastpasses the 2 weeks after Thanksgiving. What a lovely trip and we left feeling like we did what we came to do without any regrets if we couldn't make it back. Our 2nd trip was the start of FP+ and we spent 4 days (non-park hoppers) before our Disney cruise. Both trips went pretty smoothly thanks to this board and lots of time planning.

This trip is a little more laid back, however we are attempting our first time in the parks with higher capacity crowds. Our first trip we didn't have a crowd level prediction higher than a 4 and our second trip was very similar. What are the best sources for coming up with a touring plan for a busy weekend day (crowd levels on Touring Plans is around an 8 although I know these levels aren't reliable like they used to be). It would be the weekend after Veteran's Day and the weekend before Thanksgiving. We will be in LEGOLAND Monday and I want to spend at least our 1st 2 Universal days with lower crowd levels on the weekdays. I know we will be avoiding Epcot the 1st weekend because of Food and Wine. We do want to do the Star Wars and new Christmas show fireworks at HS and Fantasmic. We will do wishes on our last night (the Sunday before Thanksgiving) to end out trip. We will not be doing the fireworks at Epcot this go around.

We head home on the 11th and from what I've read MK will have the Christmas parade taping that day so you might want to steer clear of that park. I've gone when it's super crowded as well as not and I never super stress out about it. Just do your part on booking ADRs and FP early and get there at rope drop if you can. Also, if it's slammed, don't be afraid to take a break from the park and rent some mini racer boats, or take a boat to ft wilderness and take a carriage ride. Sometimes taking a step away from a super busy park is all we need. Have a great trip!
