I have a question: Does Walt Disney World do "special decorating" anytime there's a Grand Opening for a new ride/attraction/show? (I know they do special things for major park anniversaries.)

They usually do something different in the park that has the new ride opening. They also usually offer a opening day pin to celebrate the event.

Did Disney announce ahead of time about the Stitch-Castle, or are these types of things intended as a surprise to be discovered that day?

They showed it on the news here in Orlando this morning. Not sure if they told the resort guests.
