I hate to be the only one to throw in a non-Disney picture but I like this one best of any that I have used black & white on. DS jumping off the high dive.
I used Photoshop's channel mixer, reducing the blue and increasing the red to darken the sky and highlight the castle. I also added some noise to improve the old time horror movie look.

There are a number of different ways to convert to black-and-white. I forget which one I ended up using.
I then lightened it a bit because it seemed to dark without the color.
I next sharpened it quite a bit because I wanted the letters on the sign to pop a bit more and I liked what it did to the grain on the wood.
The subject matter along with the black and white lent itself to an "old time" feel so I decided to put a "torn" mask around the picture to give it an older feel.
Lastly, I decided to add a little "Hidden" effect to the train.
