i was just wondering if anyone knows if there is a best value / saving pass if you buy more days. I.e. Let's say you buy a 7 day pass vs 10 day that you get more savings off. Does that make any sense?

Above 7 days, you are "only" paying an additional $10/day. So the per-day cost of a ($515) 10 day hopper ($51.5/day) is lower than a ($485) 7 day ($69.29/day)
Are you thinking to use two park tickets in one day vs using park hoppers? Or buying more tickets and saving unused tickets? Neither works. You can only use one ticket per day and tickets are only good for 14 days after the first use. Apologies if I read too much into your question.
For each day you add to the ticket, the total cost goes up but the cost-per-day goes down. The "best value" would be an annual pass used on every day eligible for park entry. I imagine only Disney bloggers come close to this amount of usage.
