Perfumer's Apprentice Excursion in Eze

My 13 year old daughter and I were considering the perfumer's apprentice excursion in Eze, as it has gotten great reviews. However, it only allows you 30 minutes in Eze. I would love to stay longer. If I go on the Disney excursion, is it possible to stay in Eze and return to the ship on our own? If so, what is the easiest way to do this? Is this even practical?
