party excursion-Western

Which excursion would my parents like if they wanted to take a boat out to a great snorkeling location-either swim off the boat or to a beach, snorkel for a while, and then drink rum punch (or other party beverage) on the way back? They have done similar excursions on other cruises, we have done a pirate boat from RCCL, which is comparable on the Western?
OR
can something like this be done on our own like we plan to do all of our other excursions?
I know I can count on DIS'ers for the answers. Thanks
