We were planning to go to Disney the week of November 13th. Seems like there may be Xmas parties.
How do these parties work? Do you need to buy another ticket? If you don't have the ticket, do you have to leave earlier those days? Is it just magic kingdom?
I don't really want to buy any extra ticket but I'm kind of annoyed if I lose out on part of my day.
Our dining reservations are due May. But if the parks have changed hours - how can I plan which day to do which parks?
 
For Christmas and Halloween parties to attend you have to buy the special ticket to that specific party. So you go on the site and pick the day you want to attend.

If you don't have a ticket to the party then you have to leave at 7pm. It's not like PM extra magic hours where those that are offsite can still linger but just not ride rides..those without a ticket are not allowed to remain in the park. So if you don't plan on attending a Christmas party, I'd recommend doing MK on a day when they aren't doing the party.

Also it's only MK that has the Halloween and Christmas parties

Last year the Christmas Party started on Nov 7th.
 
Also be aware that those with party tickets can get into the park beginning at 4pm. The official start time is 7pm but they can start coming in at 4pm and enjoy the park.

So if you do happen to be in MK on a party day, prepare for crowds to start getting big around 4pm
 
And when do the party dates get released?
It's annoying that you have to make dining reservations at 6months out but you don't even know the park hours.
