We will be at MK 2/22 is it going to be insanely crowded because of marathon weekend? Any tips on what to do first? We won't be able to make fastpass+ selections until we are in the park.

Also we will be park hopping on 2/28 we plan to do HS in the am and Epcot in afternoon/evening. Should we make fastpass selections at HS when we get there or hope that there are still options when we get to Epcot in the afternoon.
 
The only way I know how to answer this is to say do what you want. That's not in a rude way but without more information it's hard to help. Do you have kids? Do you like fast rides? Do you hate roller coasters?
I usually rope drop the heavy hitters. Right now I would rope drop the mine train. Or space mountain. Or Peter Pan. All depending on what I felt like doing during the time and what area I would want to be in. I usually go for less walking not less waiting.

I have no clue on crowds.

As for your other question. I haven't used FP+ yet so that's a hard question. I personally would chance it and wait until Epcot but that's me with no first hand information.

We will be traveling with 6 adults 1 3yo boy and an infant. 2 of the adults have never been to Disney. We love roller coasters and really any ride.

If it was me I would ride the new mine train first. I would get a FP+ for Peter Pan later in the day and you can use rider swap for the mountains. Take your time and have fun :)

I thought the new mine train was not open yet? Still shows coming in 2014. Last time I checked at least.
 
good start for planning that morning. It includes a select one day touring plan that includes characters. You can just remove those if they are not an item for you. They also lay out which FP+ kiosks are less crowded. Hint: they are not near the front gate.

Josh at WDW tried this on MLK Day which was also a busy day with an 8:00 AM rope opening. You can read his observations here. It is a strong argument for rope drop.

Save your FP+s for some of your favorites for later in the afternoon/evening. For example we like to ride BTMRR at night for a little different experience.
 
On your park hopping day if you can be there at rope drop at least 30 minutes before park opens I would save FP+ for Epcot so you can do test track or soarin without too long of wait. As far as magic kingdom I would see what's available for FP+ when you get there

The 7 dwarfs mine train won't be open for at least another few months.

Does not look like princesses are needed based on children. If mistaken then would look at characters. BOG per another blog has a FP+ that does not count toward your FP+ total. Mesaboy has this in his FP+ discussion.

We got a fast pass for lunch we were gonna hit Mickey first then head to PP. splash will be closed while we are there
