Now that Epcot is pretty much a year-round festival park, we avoid it on Friday and Saturday late afternoons/evenings. The rest of the parks, well, it depends on what time of year. If MK has a party (Halloween or Christmas) that night, it’s usually not crowded until around 4 PM. I’m not sure about the effects of the paid After Hours parties at MK, DHS or Epcot. Any day that local residents might have off work, such as the actual MLK or Presidents Days, tend to be more crowded, especially MK. But as above, what time of year are you thinking about?

the end of february beginning of march.

the end of february beginning of march.
That should be a relatively good time in terms of relatively lower crowds overall - Presidents' Day and Mardi Gras will be over, Spring Break will just be starting around the 2nd week of March. There may or may not be a festival going on at Epcot, depending on dates for the Festival of the Arts (usually January into late February) and the Flower and Garden Festival (early March into June). So other than avoiding Epcot on Friday and Saturday night, we'd go to any park on any day, assuming nothing new comes up.

I'd say this is pretty solid advice and usually what we usually go by too.

My rules of thumb are-
  • MK to be avoided M/T as this is the park most guests kick off their week long trips so that's likely why M/T are higher avg waits
  • DHS- always busy so we just try to work this in on a day that makes sense for us
  • Ep- try to avoid Fri/Sat for sure if possible given it's a local weekender park with a festival going on which is essentially all year long. I think this year there are only 3 weeks of no actual festivals.
  • AK- it's almost always the least in demand/busy park so it's an any day of the week park for us.
Now having said all that, depending on when we're traveling, time of year, season, special events like extended eve hours and park hours, we will plan our days that make the most sense for us with all of that info.
