park-park one day ticket ?

We are considering meeting one of my sons friends over at Universal on the first week of Oct.(Probably Oct. 7th or 3rd). I can use AmEx points to get a park-park ticket so I'm considering it. Can you add the express pass the day of though if we are interested in that? Does it matter that I bought the ticket via AmEx points (through Amex)?

Yes you can add it. It is date specific so do it the day you go. There are a lot of places to purchase it in the park. The places at the front of the park can be busy so you might want to go further in to the park to buy the express pass.
