Is it safe to say that the current posted park hours for mid November are correct? I'm disappointed that AK closes at 8pm and was hoping that it may be extended.

For AK, no one knows. This is the first fall with Pandora, so we don't know what they're going to do with AK. I'm not even sure Disney knows what they are going to do.
