Do you use the park availability calendar to choose your park?

We have our park reservations all set. I'm wondering if it would be better for us to switch to a non-sold out park instead? Do you find it matters much or should we just stay put?

Book where you want to go, that works with your ADRs and the hours of the park. Note a "sold out" park doesn't mean it's at capacity, Disney is trying to spread people around. Remember when they built Frozen in Epcot to get families to go there? Now they are forcing you with arbitrary "park full" notices.

If I had my plans set I wouldn't change them without specific reason.

We thought about this on our March trip, but then the park we would have changed to also "sold out", so what would we have gained?
Thats my husbands concern too! I know there is no slow time at Disney but I thought mid-May would be less crowded than spring break!

Go to the park where you want to go, if you want nothing but non-sold-out parks you will be at Epcot or AK almost every time, and even Epcot will probably sell out a few days around Guardians opening.

Remember you don't have any idea what capacity WDW has set for each park on your days. They might have set a lower park capacity than they did for spring break, if they are expecting fewer guests. Especially for certain parks, one function of the reservation system is to try to spread crowds more evenly through all four parks.
