Where would you suggest the best spot to be at? I have a Fast Pass for the 7 Dwarves Mine thing between 2:50 and 3:50 and be able to catch our mine ride?

Probably Liberty Square, then you can make the end of your FP time. Or get to 7DMT right at your time and then head over to the right side of the castle (looking at it from the carousel) where the old smoking section was. It's far away, but you are up high so you can still see a lot of it! Have fun!

Yup.
The FoF will have passed by (ended) in Liberty Square (near Hall of Presidents) by about 3:30, so there would be time to walk into Fantasyland via the entrance near Haunted Mansion/Tangled Tower (which avoids the parade crowd) and get to 7DMT within the FP window.

I thought the parade started at 3:00, in Adventureland. Does it really take half an hour to get to Liberty Square?

FoF begins in Frontierland. @Robo means it will have completely passed Liberty Square by 3:30 and the OP will be on her way to her FP.

Thanks. I'm in nearly the same boat as the OP - SDMT FP at 3:05. Glad to hear it shouldn't be a problem making it.
