When does the Palo Brunch on the 7 day eastern carribean cruise occur? Also, am I correct that it is adult only? I would imagine that it is casual cruise attire for the brunch rather than suits and dresses right? TIA.

Yep, adults only, and I would consider the dress "resort casual" (i.e. not as formal as Palo dinner, but not jeans or a bathing suit and cover-up!). Brunch is held on the at-sea days (and on Key West day on the Western).

It can do, given that the character breakfast is offered on sea days as is the brunch. I seem to remember that the character breakfast is on your first sea day after your first visit to Animator's Palate (someone correct me if this is wrong) so once you know your rotation, you will know if the day you have booked for brunch clashes.

This happened to us one time - we had late character breakfast so just ate some fruit there and then went on to Palo for brunch. Just make sure you leave enough room for the brunch if you do have a clash.

What are the times to choose from?

Starting times are from 10:30 to maybe 12:30. Plan on between 1 1/2 and 2 hours to enjoy your brunch. Our first time we only had 1 1/2 hours and were a bit rushed towards the end. Needed that extra 15 minutes.
