You can add airfare to a Disney package, I think. I have never done this, as the change/cancellation policy is always more restrictive when you book a package, and you pay for the balance before the trip.
It has been my experience that you are almost always better off booking everything separately yourself. We live near BWI, so Southwest airlines is usually really cheap to Orlando for us. Also, we always get an AP discount on the room.
The only exception that I've seen to this is those inexpensive (IMHO) all inclusive vacations in the Caribbean or Mexico, where you take chartered flights.
I think you'll probably do best if you do your own research and be your own
travel agent. There are so many choices for resorts, and once you understand the amenities of each type, you can make an informed decision.
As an example, I have a dear friend who is a professional, makes a lot of money for the midwest, so does her husband, and she went through a travel agent to book a package to WDW with 2 of her kids for the first time. I asked her what resort they were staying at, and she told me it was "something like all stars?". I explained that that had exterior corridors, double beds, very basic, so she may prefer the monorail resorts (kids were very young and they mainly wanted to go to MK). For a little bit more she was able to get the contemporary, and she was so happy after the trip! The travel agent just steered her to the cheapest resort on disney property - but she could afford a nicer resort.
