Overripe fruit

I made a dopey mistake and threw away 2 overly soft apples before remembering that my applesauce DOES NOT need to come from a package, not that I ever made it before - I also vaguely remember baked apples when I was a kid. I wish grandma was around to ask, I think she just peeled off the skin, maybe a thin spread of butter with some cinnamon and sugar.

Now I have some bananas that went from ripe to too ripe in what seems like a day. My daughter did banana bread, I think I can do that or use a lot to stretch the pancake mix for a treat. I can't be the only person learning on a very steep curve so ideas here would be great. I was thinking banana pudding but am not sure I've ever had it.

I think I might jump in on the ugly/misfit/perfectly imperfect produce train that a lot of people on her are mentioning - if it's delivered it sounds good to me.

Freeze the bananas and save them for smoothies:)...ice, milk ready to expire, and some PB and/or chocolate syrup, and you'll feel indulgent (when it's actually pretty darn healthy)....

And if you have other "ready to go bad" fruit, those frozen bananas will work with any in the smoothie:)...
 
OK, I always thought anything starchy would get icky in the freezer. Thanks for sharing it's not 100% true! I can see I have 5 bananas, 2 will get sliced and go into pancake batter so I can feed 3 people with half the batter - I discovered cracker barrel syrup so yay! The other 3 will go to the freezer for smoothies, my kids have been antsy about their denial of indulgences like smoothies.

I like to peel and freeze, so you don't struggle to get the peel off:)...just an FYI:)...

Although if they are gonna be in the freezer months, leave the peel as protection...

I'd make a jam...or toss in a smoothie...

And if you don't have pectin, no worries...it doesn't need it...

Use this recipe and just divide til you get to the number you need to get rid off:)...and don't worry about all the sterilizing, b/c you'll put it in the fridge and eat soon anyway:)...it's 1/4 cup sugar to 1/4 lb kiwi...with a spritz of optional lemon...

for cinnamon apples - simmer peeled/cored cut up apples in a pan with a little water, cinnamon and sugar until it's to your liking. Easy peasey.

for bananas - freeze peeled bananas until ready for use in a smoothie for for making banana bread

kiwis can be used in salsa with diced tomatoes, onions and a squeeze of lime, dash of salt/pepper to taste
 
Freeze the bananas. I slice them into about 3/4" thick rounds, lay them flat on some parchment or wax paper and freeze until hard, then transfer to a ziploc bag. They will keep great for smoothies or banana bread for months and months.

Banana milkshakes are the best (milk, frozen bananas, an ice cube or two and a drizzle of honey or chocolate or caramel syrup)
 
with my bananas, I make two ingredient cookies. Mashed up banana and quick oats to form a thick sticky dough. I add in vanilla, almond, cinnamon and some chocolate or butterscotch chips. Bake 350 for 15 minutes. they are kinda gooey but super yummy. They don't last well though, so I only make enough for the day.
 
Ohhh I have some granola cereal thats a touch stale, maybe it would work!

BTW, I made Banana Pancakes and kept singing the song by Jack Johnson... a little moment of peace

We pick out the greenest bananas, and by the drive home from the store, they are just about yellow, and by the next day or two, they are spotting, so we make banana bread, banana cookies, frozen banana bites (daughter spreads peanut butter between two think slices of bananas and freezes), dice up bananas and freeze for smoothies.
 
And just happen to have marshmallow cream and peanut butter in cupboard!
Has anybody tried that vegan ice cream recipe using frozen bananas and ice milk?

If you want an ice cream recipe with bananas...if you have ricotta cheese, vanilla, and sugar, you can do this (when I could have dairy, I loved it...but that time is gone for me:))...http://housekeepingspace.blogspot.com/2010/08/super-easy-banana-ricotta-ice-cream.html

Adjust the sugar based on the ripeness of the bananas and how sweet you like ice cream...you can also stir in chocolate chips post blender...

PS - This one is vegetarian, not vegan...
 
No marshmallow cream :(

I have one little container of ricotta but I am saving it for a lasagne... maybe I can pull a smidge out. What you describe sounds a lot like ricotta cream inside cannolis, so delicious although I never blended with fruit. Its ricotta, powdered sugar and vanilla - yum. This reminded me of a simple cheesecake strawberry recipe, just score strawberries and top with some blended cream cheese, vanilla and powdered sugar .

Picked up a misfit produce order, curious what I'll get. Grateful my neighbor tends to share his tomatoes.
 
Hmmmm I always freeze old bananas to use in recipes later or in smoothies...most old fruit and veg can be use din another recipe like soup or applesauce.... I dried some tomato and orange slices in my food dehyradator the other day... I like using up fruit in pancakes or waffles, discing and tossing in vegetables in soup broth (heck,you can MAKE the veggie broth with old veg scraps and spices and water)
