Hi everyone, how do you season your whole chicken before cooking? Making a celebratory dinner on sunday for 7 people and although our chicken is good, it's just ok with salt, pepper and some garlic powder on the outside.

How can I wow our tastebuds for this meal?

Also, how big of a chicken would you buy for 7 adults?

For seven adults I would actually buy two chickens. Around 4 lbs. each. That way you will have a good mix of white and dark meat.

For seasoning, chop up some rosemary or thyme and garlic, and stir into softened butter that is seasoned with salt and pepper. You can add some lemon zest too. Loosen the chicken skin around the thighs and the breast, and rub the butter under the skin. Put the zested lemon in the chicken cavity along with some sprigs of the herb you are using.

Oooh...that sounds wonderful...thank you so much. My guess was I'd have to buy two chix, glad that sounds right to you too.
 
you can aslo put a bit of crushed garlic in the cavity, or an onion (peeled and halved)
 

Honestly, I love just salt and pepper, but I love to rub butter between the skin and meat! Also, I highly recommend BASTING your chicken!!
