Our flight leaves MCO at 3:00PM, when should we LEAVE resort for airport?

We'll be going from OKW.

While I'm at it, on our arrival day, our flight arrives at 5:00, what time can expect to get to our resort (all stars)??
 
12:30 That allows the half hour drive to the airport. You will be boarding at 2:30 so that gives you an hour and half to get checked in and through security.

If you are renting a car figure at least half an hour for luggage to come, sometimes it comes much sooner, then 15-20 mins to rent the car, then the half hour drive to your resort.

If you are using DME they will pick you up to return to the airport 3 hours before your flight.
 
How are you getting to the airport? ME will pick you up 3 hours before your flight. If you have to return a rental car, particularly from an offsite agency like Hertz or Thrifty you should allow at least that much time. If you're using a towncar and you want to cut it close you might go for 2 hours. That allows for 30 minutes travel and 1.5 hours at MC0 which is the suggested time. Traffic, accident or security line and you may be cutting close.
 
I'm pretty much repeating what Lewisc recommended...

With a rental car (on-airport or off-airport), I would recommend leaving WDW 3 hours before your scheduled departure to allow time to buy gasoline and to return the rental car.

With Disney's Magical Express, I would recommend leaving WDW 3 hours before your scheduled departure. That's how Disney schedules it. You may go to several other Disney resorts before heading to the airport.

With a towncar or taxi, I would recommend leaving WDW 2.5 hours before your scheduled departure.

Keep in mind that:
  • If traffic is light, the driving time from WDW to the airport is around 30 minutes.
  • For domestic travel, airlines recommend arriving at the airport 2 hours before your scheduled departure (although airlines publish shorter minimum times to arrive).
  • Baggage should be checked at least 45-60 minutes before your scheduled departure.
  • Passenger boarding begins 30 minutes before your scheduled departure.
  • You need to allow for the possibility of traffic delays, long lines to check baggage, long lines at security, and other potential delays.
  • If there are no delays anywhere, the worst that will happen is that you'll have plenty of time to have a meal at the airport. (Don't expect a meal on the plane.)
 

Okay - I am using ME, so my luggage should be handled through Disney, right. So our flight is at 3:00, we'll leave our resort at noon... that's easy enough! Thanks for the info. Now if only I could figure out what to do with our extra CS that day!! We won't have a chance to eat breakfast AND a cs lunch & be ready by noon. Hmmmm.
 
If you are using ME I believe they will tell you which bus to be on.
