One meal plan

Is it possible to get the meal plan for just one person? I think it would really be great for my husband, but I have heard that it really is alot of food and I'm afraid it would be wasted on me and my son!

No. It is not unless the person is a solo. On any package all people on the package must get all the same amenities. All tickets must be for the same number of days and same options, and if the meal package is involved everyone on the reservation must get it.
