One day during Peak Spring Break

I am going to be in Orlando for Star Wars Celebration and I have a late flight on the Monday after Easter (10:30 PM on 4/17). I'm a Veteran Disney World attendee who is a Solo traveler. Essentially, I would have a Rope Drop until 7-7:30 PM (Need to Uber back to MCO at that point.) This leads to the question: If you had one day during the day at Disney World, which Park would you choose and why? Would you choose Park Hopper for one day? I'm debating between MK and EPCOT (haven't seen FAE or New Soarin) and want to some thoughts.

For our family...we would choose Magic Kingdom, simply because of the Disney Magic feeling. Nothing quite like walking down Main Street with the sites, smells & music.

That time of year, I'd pick Epcot since it'll be Flower and Garden. We'll actually be at Epcot that day!
