OMG they are giving us the pumpkin muffin recipe

Thanks for posting this recipe! I had one of those muffins on Friday, and it was delicious. (just a side note - there is a really cute Mickey pumpkin on top. While it may technically be edible, it is not tasty, and you may risk a dental mishap if you insist on trying to bite off an ear! Pretend it is plastic and just enjoy looking at it.)

In the gift shops, there are at least 2 different cookbooks available. They have recipes from WDW, the Cruise line and Disneyland Resort. Look through them and choose the book that has the recipes you like!:thumbsup2 They have the corn chowder from Storytellers and the Tonga toast from the Polynesian listed.
 
I was thinking of putting something cute on top. But probably something more edible. LOL Anyone have any ideas?

I think something like the little candy pumpkins that are made of the same stuff as candy corn--i think they call them mellocreme pumpkins?

I didn't even know they sold pumpkin muffins. That's what I like about Disney...always something new to discover! Where do they sell them? Only in the park or at the hotels, too? I'll make a point to try them when we go at the end of the month. Meanwhile I'll copy the recipe anyway.

I agree about the chocolate chips! Pumpkin bread, muffins & cookies are all great with chocolate!

Just yesterday I was reading a post on mothering dot com that mentioned chocolate covered bacon. So I'm thinking that there are people out there who would enjoy chocolate covered spare ribs!

Thanks for sharing the recipe !! I really wanted to bake some autumn cupcakes for my co-workers (they're pretty much all guys and for some reason I find that men looove baked goods!!).

Now all I need is a carrot cupcake recipe to match !!

i eat those muffins all the time during the holidays and Im here to tell you that if you shred up some carrot in the batter they will taste exactly like carrot cake!! so therefore carrot cupcakes:thumbsup2

Already added the ingredients to my list for my next shopping trip! Will make them for my inlaws. Thank you so much for posting for those of us that don't have APs. I will in a couple of weeks, thought. Will be upgrading from the parkhoppers.

I am a pumpkin pie fanatic, so if these are even close to pumpkin pie, I will be :goodvibes :banana:

They are in the oven now!! (But I tinkered with the recipe a bit - like I always do with every recipe, LOL!!)

I had to go get some screw drivers at Home Depot, and grabbed some Mickey Alien Paint samples to prepare for our trip in 5 months.
;)

And had to go to the store too, so I grabbed the pumpkin & cream cheese.

Can't wait to try them!
 
Off to the store to get the rest of the ingredients I need! I'll post pictures and how they turned out in a bit!

I made these this morning! They were great and my family loved them. They have eaten them all! I don't have the tube-y thing for filling them up with the frosting, so I just frosted them with the icing instead. And now I have a half a can of pumpkin left - so pumpkin pie for dessert tonight! :laughing:

One little note - let them cool in the muffin pans or they come out looking funny! They get all squishy and floppy. I think because the muffins are sooo soft.

And they are VERY GOOD with chocolate! Although, they would probably be good with Craisins instead of raisins. Since I am not a fan of raisins, I can not imagine ruining anything with them! LOL! :scared:
 
Mine are done, but in the refrig. to set up a bit.

If I made them again, I would only make a half batch of the icing/filling. The recipe made TONS of it, and now I have no idea what to do. Do you think it will freeze okay??
 
I ended up with 23 regular sized muffins. And about 3+ cups of the filling leftover.
