Okay..I've boiled the carcass of the turkey...

now what?? I'm going to pull all the meat off the bones - I'd like to make soup or whatever...anyone have any recipes?? (I saved all the broth too).

Check out allrecipies.com there are a ton on there. I made a turkey with wild rice one that is really good. You need a box of 10 min uncle bens wild rice, but it is really worth the trip to the store (I also used the traditional box and just cooked it longer and it was good).

I am going to make the soup and also a turkey pot pie today.

I am doing the same thing today!I use turkey soup or chicken soup base for more flavor. Pick the carcass and add the meat to your soup. I add a whole onion, chopped carrots, celery, and diced potatoes. I also make Bisquick dumplings but am opting for noodles today. You make those separate and add them to the soup at the end. Cooking time is until your veggies are fork tender. I use a huge stock pot. I sometimes add left over stuffing too at the end. It's yummy!

Last night I made turkey shepherds pie. I made my own gravy because we were out by browning butter and flour and adding water along with some turkey base. I added mixed veggies and some turkey. I layered stuffing in a casserole dish, put the meat and gravy mixture over that and put the leftover potatoes over that. I topped that with some leftover butter and baked at 350 for about 25 minutes.
 
I'm doing the exact same thing right now & making a turkey & sausage gumbo (you could also use shrimp). This is the recipe that I'm using: http://www.foodnetwork.com/recipes/emeril-lagasse/turkey-andouille-gumbo-recipe/index.html (You don't need to include the scallions.)

I always make a gumbo w/ my leftover turkey pieces (using the stock I made from the carcass & veggies). In the next few days, I'll be making a turkey potpie, turkey enchiladas, and turkey stuffing casserole.
 
Yup, carcass is in the big pot. Will drain and pick the meat off later. I'll proabably boil it up with the carrots and celery tomorrow and add some boullion. What we don't eat tomorrow I'll divide up into bags and put in the freezer. We cook the noodles or rice when we heat it up and add it then. I like the dumpling idea, I'll have to try that. Lunch today was turkey tetrazzini.

Tonight will be homemade pizza (turkey free).

We still have a 22 lb and 18 lb turkey in the freezer to cook over the next few months. At 29cent a lb we couldn't pass it up.
