Almond Joy Bars

Amount Measure Ingredient -- Preparation Method

1/2 cup shortening
3 tablespoons cocoa
3 eggs
1 1/4 cups sugar
1 cup flour
14 ounces sweetened condensed milk
2 cups flaked coconut
1/2 cup sliced almonds
2 ounces unsweetened chocolate -- melted
3 cups confectioners' sugar
1/3 cup cream OR milk
1/4 cup butter -- softened
1/4 teaspoon salt
1 teaspoon vanilla

Combine shortening, cocoa, eggs, sugar and flour.
Spread in 13x9" baking pan.
Bake at 350 degrees for 20 minutes.
Stir together sweetened condensed milk, coconut and almonds.
Spread over partially baked, hot crust.
Return to oven for 15 minutes more. Let cool.
Combine chocolate, confectioners' sugar, cream, butter, salt and vanilla. Beat until smooth.
Spread over cooled bars.

Basic Fudgy Brownies (with variations)

1/2 cup butter or margarine
4 ounces unsweetened baking chocolate -- chopped
1 1/3 cups sugar
3 large eggs
1 1/2 teaspoons vanilla extract
3/4 cup all-purpose flour

Heat oven to 350 degrees. Line an 8" square baking pan with foil, letting ends extend above pan on 2 sides. Coat foil with nonstick spray.
Melt butter and chocolate in a medium saucepan over low heat, stirring often. Remove from heat. Whisk in sugar, then remaining ingredients until smooth. Spread batter in pan.
Bake 25-30 minutes until a wooden pick inserted in center comes out with moist crumbs attached. Cool in pan on wire rack.
Lift foil by ends onto cutting board. Cut into 16 squares.

PEPPERMINT PATTIE
Prepare Basic Fudgy Brownies through mixing stage.
Spread HALF the batter in pan (about 1 1/4 cups). Cut 10 chocolate-covered peppermint patties in half. Distribute evenly over batter. Spread with remaining batter, covering patties completely. Bake as cool as directed.
Melt 3 ounces chopped bittersweet or semisweet chocolate and 2 tablespoons butter or margarine. Stir in 1 1/2 teaspoons corn syrup. Cool 10 minutes or until no longer hot, but still loose enough and spreadable. Spread over brownies. Chill until firm. cut as directed.

CAPPUCCINO
Prepare Basic Fudgy Brownies through mixing. Stir in 1/2 cup chopped, skinned, toasted hazelnuts and 2 teaspoons instant coffee powder.
Bake and cool as directed.
Stir 1/4 cup each softened cream cheese and butter or margarine in a medium bowl until smooth. Stir in 1 teaspoon each vanilla extract and instant coffee powder, then 2/3 cup confectioners' sugar until smooth. Spread over brownies. Dust lightly with ground cinnamon. Chill until firm. Cut as directed.

Brown Sugar Shortbread

1 cup butter -- softened
1/2 cup packed brown sugar
2 1/4 cups flour

In a mixing bowl, cream butter and sugar. Gradually stir in the flour.
Turn onto a lightly floured surface and knead until smooth, about 3 minutes.
Pat into a 1/3" thick rectangle measuring 11x8".
Cut into 2x1" strips.
Place 1" apart on ungreased cookie sheets. Prick with a fork.
Bake at 300 degrees for 25 minutes or until bottom begins to brown.
Cool for 5 minutes. Remove to a wire rack to cool completely.

Chocolate Whoppers

6 ounces semisweet chocolate
2 ounces unsweetened chocolate
6 tablespoons unsalted butter
2 large eggs
3/4 cup sugar
2 teaspoons instant coffee powder
2 teaspoons vanilla
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup flour
6 ounces semisweet chocolate chips
4 ounces walnuts -- chopped
4 ounces pecans -- coarsely chopped

Oven rack in middle of oven. Preheat oven to 350 degrees. Line cookie sheet with foil.
Micro both chocolates and butter in a medium bowl on high for 1 minute, then stir. Repeat at 30 second intervals until chocolate and butter have melted and mixture is smooth. (Or melt chocolate and butter in a saucepan over low heat, stirring until smooth). Let cool slightly.
In another bowl, with mixer on high speed, beat eggs, sugar, coffee powder, vanilla, salt and baking powder until lighter in color and bubbly, about 2 minutes. Reduce speed to low and beat in chocolate mixture (which may still be quite warm). Add flour and beat just until blended. Stir in remaining ingredients.
Using a scant 1/3 cup batter per cookie, drop 5 mounds on each cookie sheet, 1 in middle and 1 toward each corner (dough is gooey).
Don't flatten tops.
Bake 13-15 minutes, no longer. Surface will be dry, shiny and cracked, but inside will be soft.
Slide foil off cookie sheet onto countertop. Cool cookies on foil, or remove to a wire rack to cool.

Cinnamon Sugar Butter Cookies

3 tablespoons sugar
1 tablespoon ground cinnamon

2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup packed dark brown sugar
1/2 cup sugar
1 cup unsalted butter -- softened
2 large eggs
2 teaspoons pure vanilla extract

Preheat oven to 300 degrees.
In a small bowl combine sugar and cinnamon for topping. Set aside.
In a medium bowl combine flour, soda and salt. Mix well with a wire whisk and set aside.
In a large bowl blend sugars with an electric mixer set on medium speed.
Add butter, and mix to form a grainy paste. Scrape sides of bowl, then add eggs and vanilla. Mix at medium speed until light and fluffy.
Add flour mixture and blend at low speed just until blended. Do not overmix.
Shape dough into 1" balls and roll each ball in cinnamon-sugar topping.
Place on ungreased cookie sheets, 2 " apart.
Bake for 18-20 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.

Damsel's Famous Gingersnaps

3/4 cup shortening -- or lard
1 cup sugar
1/4 cup molasses
1 large egg
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
2 cups flour

Combine ingredients in order given. * Do not use butter or margarine!
Roll dough into balls the size of a walnut. Dip one side in sugar.
Place dough balls, sugar side up, on ungreased cookie sheet.
Bake 10-12 minutes at 375F.


NOTES : Try omitting the salt next time.

Final Exam Brownies

1 cup butter
2 cups sugar
4 eggs
1 teaspoon vanilla extract

2 cups miniature marshmallows
1 cup chopped pecans or walnuts
1 1/2 cups semisweet chocolate chips -- divided

In a microwave or double boiler, melt unsweetened chocolate and butter. Stir until smooth.
In a mixing bowl, combine sugar, eggs, vanilla and chocolate mixture.
Add flour. Mix well. Fold in marshmallows, nuts and 1/2 cup chocolate chips.
Spread into a greased 13x9" baking pan. Sprinkle with remaining chocolate chips.
Bake at 350 degrees for 40-45 minutes or until top is set. Cool on wire rack. Cut into bars.

Indoor S'mores

8 cups Golden Graham cereal -- (13 ounces)
1 1/2 cups milk chocolate chips
6 cups miniature marshmallows -- (10 ounces)
5 tablespoons butter or margarine
1 teaspoon vanilla
1/4 cup light corn syrup -- optional

Melt 5 cups marshmallows (save 1 cup for later), chocolate chips, butter and corn syrup in a 3 quart saucepan over low heat, stirring occasionally. Remove from heat. Stir in vanilla.
Butter rectangular pan, 13x9".
Pour golden grahams into large bowl. Pour marshmallow mixture over cereal. Stir until evenly coated. Stir in remaining marshmallows.
Press mixture into pan with buttered back of spoon. Cool until as firm as you'd like. Cut into bars.
Store loosely covered at room temperature.

Preheat oven to 375 degrees.
In large bowl beat sweetened condensed milk and peanut butter until smooth. Add Bisquick and vanilla. Mix well.
Shape into 1" balls. Roll in sugar.
Bake 6-8 minutes. Do not overbake.
Press kiss in center of each ball immediately after baking. Cool on wire racks until kisses are set.

2/3 cup oil
2 teaspoons vanilla
3/4 cup sugar
2 cups flour
2 teaspoons baking powder

Beat eggs, oil, vanilla and sugar together.
Sift flour, baking powder and salt. Add to egg mixture. (Dough will be soft).
Drop by teaspoons 2" apart on ungreased cookie sheet. Press cookies flat with bottom of a glass dipped in sugar.
Bake 400 degrees for 8-10 minutes. Remove immediately from cookie sheets.

1/2 cup white chocolate chips
1/2 cup milk chocolate chips
1/2 cup finely chopped nuts

Preheat oven to 325 degrees.
Combine flour, baking soda and salt. Set aside.
In a saucepan combine butter, sugar and water and heat just to a boil. Remove from heat and add semisweet chocolate and vanilla. Stir until chocolate has melted and mixture is smooth. Add eggs, one at a time, beating well after each addition. Gradually blend in flour mixture. Stir in white chocolate chips, milk chocolate chips and nuts.
Spread batter in greased 8" square pan and bake for 30-35 minutes.
Cut into 2" bars.
