Oh Christmas Cookies! Oh Christmas Cookies!

Boy, that's a new one on me, Patty! I'm going to have to give it a try. How in the world did you figure it out?

Pat

P.S. Love your name, by the way!

 I must give credit where credit is due -
My Mother-In-Law!
I have no IDEA where she came up with it! But EVERYONE loves them! Hope you do too!

PS must be short for Patricia ;)

Here's our favorite. Don't use butter or margarine instead of vegetable shortening. They will be too flat.

10 OZ. PKG. CHOCOLATE KISSES
2 TSP. BAKING POWDER
1/2 CUP GRANULATED SUGAR
1/2 TSP. SALT
1/4 CUP PACKED BROWN SUGAR
1/2 CUP GROUND ALMONDS OR
PECANS
1 EGG
1 TSP. VANILLA
1/2 TSP. ALMOND EXTRACT

PREHEAT OVEN TO 350 DEGREES

CREAM CRISCO AND SUGARS UNTIL FLUFFY. ADD EGG AND EXTRACTS AND BEAT WELL.

ADD FLOUR, BAKING POWDER, NUTS AND SALT.

FORM DOUGH INTO 1" BALLS.

PRESS AROUND A KISS.

BAKE 12 MINUTES ON UNGREASED SHEET. DO NOT OVERBAKE.

DECORATE IF DESIRED.

This recipe is so easy and looks like you slaved over it:

Line jellyroll pan (or any kind of cookie sheet with an edge) with foil.
Spray with PAM.
Line with unbroken saltines.
On stove, boil 1 cup butter and 1 cup brown sugar for 1 minute.
After boiling, add 1/4 tsp. baking soda. (Mixture will foam up).
Pour over crackers and bake 350 for 6-7 mins. Do not overbake.

Immediately pour bag of chocolate chips and spread over mixture until melted. Sprinkle with sliced almonds.

Let cool for one hour and then put in frig for couple hours.
When hardened, break into uneven pieces.
Yum! I store mine in airtight container in frig.

Enjoy!
Happy Holidays.

GINGERBREAD COOKIES

My favorite Gingerbread Cookie recipe. Light flavor with a hint of orange. Not to mention that they make your house smell GREAT while they are baking.

1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 1/2 tablespoons orange zest
2 tablespoons dark corn syrup
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt

Cream the butter and the sugar together. Add the egg and mix well. Mix in the orange zest and dark corn syrup. Add the flour, baking soda, cinnamon, ginger, ground cloves and salt, mixing until well combined. Chill dough overnight.

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

Roll dough out to 1/4 inch thick and cut into desired shapes. Place cookies 1 inch apart on the prepared pan. Bake at 375 degrees F for 10 to 12 minutes.
