How quick will the park get to full capacity.? We have 5:00 fp's & can't get them earlier but really want to open Epcot.

Last year Magic Kingdom hit a phase 1 closure around 9:30 a.m. however if you are staying on property you should be able to get in all day, it has been years since they have completely closed off entry for people staying at a Disney Resort. I have read that since the Fantasyland expansion it is unlikely that Magic Kingdom will ever hit completely full capacity.

Are you on site or a AP holders? If you are then don't worry at all. VERY RARE that any park anytime of the year hits "full" capacity

The park will likely each a phase 2, maybe a phase 3.

You should be fine going to Epcot first then MK..but just allow plenty of travel time in case roads are backed up. Since you have 5pm FP's I would plan to leave Epcot at 3 and head to MK
