What's your favorite thing to do on a non-park day? We will only have one day that we don't visit the parks at all. I'm planning on hitting Disney Springs at some point, but with 3 kids in tow, we probably won't spend a lot of time there (less shopping with them is better on my wallet!!!). What resorts do you like to explore on your off day? We'll be staying at POP in October.
 
We enjoy the Boardwalk area in addition to Disney Springs. From POP you could take the skyliner over to Epcot then walk around the Boardwalk (or rent one of those surreys) since the stop is at the International gateway. And plenty of resorts there to explore if that’s your thing
 
A monorail tour, grabbing snacks at each resort to share. If you are a super creative person you could plan a scavenger hunt of sorts. Have them find interesting things at each resort (5 legged goat at Contemporary, etc.). I have not done a skyliner tour yet, but it is on my list for 2020. Depending on the time of year, a day on the boardwalk could be fun (but hot during summer months).

One of our favorite things to do is renting the pontoon boats at the MK resorts.
 

x2 on boardwalk, and i'll add in to get ice cream at ample hills while you're there (though i've read one is also opening in DS.) Check out the different sections at AoA if your kids are into cars, nemo, lion king, or little mermaid. We also liked the savanna look-outs at AKL on the day we ate breakfast there.

With three kids in tow, I would make your life easy and do a Skyliner tour from Pop. As other have said, you can walk over to AoA and explore, then hop on the Skyliner, transfer at CBR and head over the the EP IG stop. There you can walk completely around the Boardwalk. I would do this early evening so you can watch the entertainment on the Boardwalk, perhaps rent a Surrey bike and play the carnival games
 
Bowling st DS or the dine in movie theater where you can order lunch. The balloon ride at DS. Or the amphibian cars at Boathouse.
 
We're planning on hitting the Epcot resorts, the MK resorts, and/or Disney Springs on our non-park day, depending on how long we stay places will determine how much we do.

One of my kids is into hidden Mickeys, so we may do the Hidden Mickey hunt at WL, and we'll probably let the kids try their hand at pin trading at the resorts we hit, too, along with all of the other activities available at each resort.
 
Some of our best days we just hang out at the hotel and do hotel activities, we always say we spend a ton of money to go to these hotels so we enjoy them. Riverside is a favorite of ours and we love the nighttime movie on one of the mansion lawns.
