So my 180+10(6) just passed, and 36 minutes later I have confirmations and got every reservation I wanted near the time I wanted except one (Ohana, changed to the plaza but the plaza fits better anyway, I just sorta wanted to try Ohana...). This is a solo trip except for the very last meal, and I can eat a lot, would absolutely do DxDP if I didn't want VnA so bad.

Arrival Day - 1700 Victoria and Alberts (MK before and after, not sure where i'll keep coat/change)
Day 2 early Hollywood studios, leave by 1130 and walk/boat to Epcot
Lunch: 1230 Biergarten
Dinner: 1945 Rose and Crown dinner (2100 Illuminations, hoping for view)
Day 3 early Epcot, Lunch then on to HS for Fantasmic, after fantasmic walk to dinner.
Lunch: 1310 Le Cellier
Dinner: 2100 Beaches and Cream (1900 Fantasmic, I'm perfectly comfortable walking from HS to B&C, so I'm assuming 2 hours is well more than enough, only problem will be getting back to POP)
Day 4 early AK, bus to AK lodge, bus to MK
Lunch: 1335 Sanaa (I don't know what time to leave AK for this, 1230?)
Dinner: 1910 The Plaza Restaurant (I wanted this to be Ohana, but it may be too much with Sanaa anywhere where I want to have a large lunch, so I'm okay as long as I get a lapu lapu at some point)
Day 5 early MK monorail to Epcot
Lunch: 1200 San Angel Inn (Is leaving MK at 1100 okay, or should I plan on earlier?)
Dinner: Snacks while drinking around the world, probably spice road or tutto gusto at some point.
Day 6 early HS bus to MK after lunch
Lunch: 1145 Sci-Fi
Dinner: I GOT IT 1845 Be Our Guest (this is my birthday dinner and my brother/his wife will hopefully be joining, it is the reason I've stayed up so late when I have to be up in a few hours). The parade is at 2100 and I'm hoping to be done in time.

Anyone have any suggestions on where I may be steering wrong here, anything I should change while it's still early enough for availability?
