Judy, I want to tell you about something you may already know about. Yesterday, I got a large bag of thighs and legs with back meat for $5. It contained 7 large pieces of chicken. I am cooking them in my crock pot and it will be enough to do me for a couple of weeks. (I realize they wouldn't last that long with your family of 6!) But there are thighs, legs and additional meat on each one. I plan to freeze what I am not immediately going to use. I will take the meat off most of them and use it for chicken and noodles, chicken and dumplings, chicken pot pie, etc.

I know you don't have HEB since that is a Texas thing, but I have seen them in other stores, too. I have difficulty cooking since I can't stand for very long without a lot of pain, but the crock pot makes it much easier! You could put them in your crock pot and let them cook while you are out and about!


I love any and all tips Piper, I am a frugal shopper and love to hear how people stretch their dollars. Chances are I might know it...but then again, maybe I don't! I have never seen a pack like hat, but sometimes they will have a tray of legs or thighs for a really good price and I LOVE to use my crockpot...it ensures we have something yummy after a long day. Thighs are a great cut for the crockpot!

I am sorry it is painful for you to cook and do so many things. I am happy you have ways to make it easier! :hug::hug:


I just wanted to add that when I make fried rice a lot of the time I will cook some veggies like bell peppers, onions, broccoli, mushrooms, snow peas, zucchini, or squash in a pan with just a little bit of oil, salt, and pepper, and either mix them in the fried rice or serve them on top of it to make it go a little bit farther.

We love ALL of those veggies!! I have been bummed David's garden is yielding the produce we hoped for/needed because of all of the rain. I hope the rain is getting out of the way before we head to Florida! Praying all is well or at least stable!! :hug::hug:
 


Okay...The last two days have been quite wild. We have gone from the lowest of lows to the highest of highs...I will not go into it all, BUT I will share Pete’s insurance year runs August 1 to July 31. We received notice his plan is switching to a (massively) high deductible account August 1...nothing like giving you a 1 week notice of news like this. I thought $1.500 a person deductible was high, how naive I have been. I have so much more I could say about this, but it wouldn’t change a thing. I just typed a bunch more of what is going on around here and erased it, lets focus on the good stuff!

Last week I received a kind email from someone I had never “met” online. Long story short, this very kind lady (DIS name pamlur) had been following our DIS journey for awhile and knew how much Lisa loves meat and how it is often a luxury our budget can’t handle, no matter how frugal I am (and believe me I can pinch those pennies till they squeal). Without going into lots of detail, she IS the answer to a prayer. You all know I truly believe in prayer and it is so visible in our lives. The right things aligned and it arrived yesterday...on a day that we absolutely needed something to affirm good things DO happen!

There was not one,but TWO coolers that arrived and were waiting on us when we arrived home. Lisa’s face lit up like a Christmas tree when she saw those two coolers, thanks to Lisa (mickeystoontown), she KNEW what was inside those coolers! Christian was carrying them over to the couch so we could take pics as we opened them and Lisa had to “help” she didn’t want him to drop that precious cargo. The children ALL love meat, so this was a huge, fun time of discovery! Check out those faces!!

I had 96 pics, I just picked out a few to share.

There was 2 boxes of chicken breasts, 3 boxes of ground beef, 2 boxes of beef tips, 4 pizzas, 2 boxes of pork loins and a box of thick cut bacon (that the children discovered was open and drooled over, lol). Pam a HUGE Thank you for spoiling us and bringing those amazing smiles to the children. I can’t wait to cook!

After all of the bad news of the past two days, I love how God began the process of all of this last week, utilizing Pam to help...and had it delivered to us on a day we really needed some happiness.

PAM, now that you have became a part of our story, I hope you might join us here! :flower3:

I am so glad that the coolers got there in good condition. Lisa had told me how she did it, so I followed in her footsteps.

wow, what a thoughtful gift! I'm glad to see Lisa is feeling better, I hope she continues to improve and that Rachel's asthma improves also. Does the dampness from all of the rain contribute to her attacks? I know I have more problems with mine in humid weather.
I haven't been on here much this summer. I actually took 3 trips this summer. A record for me! the Disney trip was great as always. I am so thankful that my sister asked me join them to experience her children's first visit. Watching my 3 year old niece's light up when she saw the princesses for the first time was priceless. My 5 year old nephew discovered that rides were fun after refusing to go on anything at an amusement park last year. I was home for about 2 weeks than took a 1100 mile road trip to visit family in NY State with my brother, sister-in-law and 7 year old niece. We stopped over night on the way there but drove straight through on the way home. The 3rd trip was a family trip, 5 out of my 7 siblings, their families and I went to the closest amusement park for a weekend. I think we had about 24 in our group. We have to go to either Des Moines, IA or Kansas City,MO to go to an amusement park. Next week is my last week of vacation as teachers report back to school Aug.7 and the kiddos Aug.14. I am excited to see the new group of first graders that I will have this year. I've already spent over $100 buying supplies and things that the district doesn't supply as we aren't allowed to send home "required" supply lists only a few "suggested" items.

Resting is good and better than being up too late! I am glad you are doing what you need to feel good for you and the baby! The baby...LOVE saying that!

I think that's one my favorite things to say right now are "We're having baby!!" :rotfl2: Now to just get DH to agree to tell his family will make it that much easier to share even more!! He's just afraid to though because of all the other problems we've had. So I get it.

It WAS an amazing gift wasn't it?!? I am so excited to eat some meat this weekend!! The children are thrilled (so are Pete and I).
Insurance...a necessary evil...they need a woman like me to fix the problems...someone who has been on both sides of it, I actually worked for an insurance company (as a nurse).

Sorry to hear about insurance. But what an awesome gift.
I "saw" you up at 3:45 when I was posting, I hope you were able to go back to sleep and JJ is feeling better. :hug: I am still in denial over the insurance, how they expect people to pay these deductibles is beyond me. Who knows, I haven't done the math, but time will tell if it is cheaper. At least the children can keep their 22 different specialists!
