For custom desserts (I assume you are also looking for something sugar free) you will need to call the cake hotline and ask what is available for delivery to a restaurant in Epcot.
 
If you are asking to find out what kind of cakes others have gotten, you can see that on the cake thread. I know it's long, but there are some pictures and descriptions on that thread, it's why there is a cake thread.

The only way for you to know for sure if you can get what you want is to call the cake hotline and ask for a dessert suitable for a diabetic, with decoration to commemorate a cancer survivor, to be delivered to a WDW restaurant. Let them know which restaurants you are attending that you might have the dessert delivered to. Then find out what they can tell you about where would be the best place to order something like that. If you have a price in mind, communicate that to them before you order anything.

The restaurants themselves won't do this kind of custom cake or dessert for you. They might be able to write something on the plate though, that sort of thing.
 

I think it sounds like you are asking which restaurant would you recommend for this event so then you can call the cake line and ask what is available at Le Cellier or Coral Reef. Correct?

If that is the case I would recommend Le Cellier or Coral Reef. I am also a huge Teppan Edo fan but since you share a table with other diners there that may not be a good option. I think Coral Reef is amazing because of the tank and it's a really unique atmosphere. However Le Cellier would be my opinion as the best because it just seems a little more like a special occasion place. It's definitely not as well themed but it's very nice inside. So I would suggest that as long as you all like steak.

Also if you don't want to order a cake from the cake hotline you could order a regular dessert and bring a pink ribbon with you and ask the server to place it on the plate. I am sure they could write a message on the plate as well with sauce like they do for anniversaries.
 
Christine, your mom is going to be able to get sugarfree desserts at all the restaurants. You could make it easier on yourself but still special for your mom by ordering flowers or something for her in the room from the WDW Florist.

(As a fellow diabetic, I don't really want to celebrate something by focusing on dessert, you know what I mean?)
