Nice resort to enjoy for 1 night?

Does anyone recommend a nice hotel/resort to stay at for one day/night in the Orlando area? We are looking for one that has a nice pool and restaurant. We want to spend the day/night after taking a long WDW land/sea pkg. Thank you in advance!:)
