Well - a LOT of folks make their dining plans way way in advance... and sometimes the more popular places get snapped up pretty quick...

That's not to say you won't be able to find some great dining..

Are you on the dining plan? if so... is it the regular one? (1ts/1qs/1snack) or another? or are you eating out of pocket?

What type dining do you like ?

If you are on a dining plan which includes the Table Service meal... I would get on the phone with Disney Dining and find out what is available...
You can read the menu's online to see what they have to offer...

My personal fav's:

MK: CRT/TS....Cosmic Ray's / QS ...
Epcot: Teppan Edo....Sunshine Seasons (NEW lover of Le Cellier as well/TS)
DHS: 50's Prime Time was Great...but I've been getting the F! dining package which helps decrease the wait time for Fantasmic. I've done H&V and HBD so I'll be trying MM next. For QS - Sunset Market

AK: Yak & Yeti TS was Great! haven't tried a QS but will try Flame Tree next visit...

What park will you be at? I'd look to see what's available for the day and time you want and check out menus.
 
Since you are going in a couple weeks and have yet to make reservations for sit down restaurants, you may have a hard time getting a few.

So I would say you should look on the site here at the menus (under dining - they have a complete list) and get an idea of the places you would like to go to.

WDW has so many places to fit every taste so I can only offer the ones I like, but if my choices aren't your tastes, be sure you can find something that is.

Our favorites include: Ohana at the Poly resort. Oh this is such a good meal. All you can eat family style dinner (yes we do to dinners). It has meat skewers of sirlion, chicken, pork and peel and eat shrimp. Lomein noodles, sticky wings with 3 sauces, a veggie dish with brocolli, snowpeas and carrots.
And dessert....oh the best bread pudding with bananas foster caramel sauce with vanilla ice cream....ugh just heaven.
This is a very hot ressie though, so it may not be available.

Whispering Canyon is another favorite, Crystal Palace is a character buffet in MK that we love.

2 of my FAV's are Columbia Harbor House in the MK and The Flame Tree BBQ in AK. Both are counter service.


One tip I read and tried was to "share food" at the counter service eateries. That is, if you're paying out of pocket (Now with the Free Dining deals out there, this advise may be mute)

For example: We're in the MK and stop at counter service Columbia Harbor House. There's 4 of us ( 2 adults, 2 kids) I order only 3 complete meals. This doesn't mean the kids have to share a 1/2 meal each, just that it's enough food for all. Things like sandwiches, fries and drinks are easy to share.
 
Here are some fun places that are kid/budget friendly and might be open for reservations a couple weeks out...be sure to go to the Disney website and click on the dining tab to try and get advanced reservations. Have a great time!!

Magic Kingdom - Crystal Palace (a fun Winnie the Pooh character meal)
Epcot - Rose and Crown (a British pub themed restaurant)
Studios - 50's Prime Time Cafe
Animal Kingdom - Tusker House (a buffet...characters at breakfast)

Near the Magic Kingdom - Kona Cafe at the Polynesian
Near Epcot and the Studios (and no reservations needed) - Beaches & Cream (at the Beach Club Resort), The Fountain (at the Dolphin Resort)
Near the Animal Kingdom - Boma (a buffet at the Animal Kingdom Lodge)
