New to ADR...Does booking online show passholder/DVC memberships to get the discounts?

Not to my knowledge. We always check the website for AP restaurant discounts and mention it to our server. We always have to show our pass each time as nothing is noted in the ADR.

No, booking online doesn't show discounts. For most ADRs, you tell your server at the beginning of the meal (or at least when you ask for the check) that you have DVC or AP, etc., and show them the confirmation of eligibility on your phone. For ADRs that are paid at time of booking, you probably have to ask for the discount (and prove eligibility) at the time of your meal. For example, for Hoop Dee Doo Revue, we paid full price when we booked, then on the day of our ADR we went to the ticket window, showed our DVC/AP proof, and received a credit to our card.

I'm double checking..my check-in day is Jan 1st and I'm staying at a resort is my ADR for November 2nd? I'm so confused and thought you would include length of stay also??

Length of stay refers to booking all days (max 10) of your trip but you still start 60 days before check-in. So if you're staying on site for 5 days starting Jan 1, then on Nov 2 (assuming that's the right math) you can book your ADRs for Jan 1 through Jan 6. If you were not staying on site, then on Nov 2 you could book for Jan 1, then on Nov 3 you could book for Jan 2, then on Nov 4 you could book for Jan 3, etc. The length of stay benefit means you only have to wake up early once to do ADRs.

Works the same at CRT. Let your server know you have AP and they will adjust prepayment with proof.
