Or at least something similar to one!! DH wasnts to take something like a french toast casserole to work one Sunday for a pot luck they are having. Siiiince he works in the morning he wanted to take a breakfast type food. He mentioned a french toast casserole but I have never made one!!! Any ideas??
 
I just saw a recipe for a waffle casserole and I can't remember where I saw it.

You could make an Egg Casserole:

Butter the bottom of a casserole dish. Line the bottom of a 13 X 9 X 2 casserole dish with slices of bread or with croutons. Crumble and brown a pound of sausage and drain, or cook bacon slices and crumble those after cooking, whichever you prefer. Beat 6 eggs well and add some milk or cream. Stir in chopped onion, bell pepper and any other vegetables you desire (I sometimes use chopped asparagus, chopped broccoli, chopped garlic, chopped tomatos, etc.). Stir in crumbled bacon or sausage and as much grated cheese as desired (use whatever cheese you like). Bake at 350 until eggs are done.
 
Here's a really good French Toast Casserole type recipe.

Apple French Toast

INGREDIENTS
1/2 cup melted butter
1/4 cup honey
2 teaspoons cinnamon
6 eggs
1 cup apple cider
1/2 teaspoon salt
1 cup milk
1/4 cup sugar
1/2 teaspoon cinnamon
1 loaf French bread, cut on diagonal


DIRECTIONS
In small bowl, combine melted butter, honey and two teaspoons cinnamon. Mix well. Pour into a 15x10 jelly roll pan. Let stand.

Mix rest of ingredients, except bread. Dip bread into egg mixture and place on butter mixture in pan. Pour any remaining egg mixture over bread. Cover and refrigerate overnight. Uncover and bake at 400 degrees for 20 minutes or until golden brown, turning once halfway through baking.

Top with favorite syrup, jam or jelly.


I made one adjustment to the recipe by actually flipping the toast over in the pan mid way through cooking so, that both sides get crunchy. Also, I found that I had to cook it longer than the recipe stated to get a crunchy crust.

Try the breakfast lasagna from the Crystal Palace. I know that recipe is floating around here somewhere. It is really wonderful and DH and I both get requests to bring it in for goodie day type things. :)

DD has a few girls over for a b'day sleepover tonight. I'm making Peach French Toast which is a casserole. Mmmmmmm ;)

PEACH FRENCH TOAST

1 c packed brown sugar
½ c butter or margarine
2 Tbl water
1 can sliced peaches, drained (29 oz.)
12 slices French Bread, 3/4 inch thick (day old)
5 eggs
1½ c milk
1 Tbl vanilla
ground cinnamon

In a saucepan, bring brown sugar, water & butter to a boil. Reduce heat & simmer for 10 minutes, stirring frequently. Pour into a greased 13x9x2 inch pan. Top with peaches, arranging bread over peaches.

In a bowl whisk together eggs, milk & vanilla, slowly pour over bread. Cover with foil and refrigerate over night.

Remove from refrigerator 30 minutes before baking. Sprinkle with cinnamon.

Bake at 350 for 20 minutes covered. Remove cover & cook for 25-30 minutes or until bread is golden brown.
