Need Orlando Resturant help

The end of this month is my wifes' 10th Wedding Anniversary. I was thinking doing some Blue Man Group Tickets to get us to Orlando, and while we there find a nice place for dinner. She is really into Sushi, but I want to stay away from the chain places, and most of the places on I-Drive as she's been to all of those. She prefers Sushi, but as long as its uber nice, I dont think she'll mind if its not.
What about Tchoup Chop? Is that the best place onsite at Universal? We really loved Mama Dellas for the atmosphere and the romance it kind of put in the air, but again, she's been there. I also would like a place that would kind of help out with a sparkling surprise I have tucked away as well. Any suggestions would be appreciated.
 
If your pockets are deep, I'm going to say go offsite and surprise her with Victoria & Albert's. The food is incredible and if you go with the wine pairings, the best pairings I have ever had. They will also do a special course to serve that sparkling item on a bed of flowers if you tell them about it.

How deep, and how far out do I need to make ressies?

Erik, Tchoup Choup is excellent. The only problem for me there is that there's no cookies, but let's not start that here. I don't recall sushi but I could be wrong. Your pockets do have to be pretty damn deep for Tchoup Choup too. This ain't no cheap Disney theme park restaraunt.
 
There is a sushi restaurant, Seito's, in the town of Celebration. I have not eaten there myself, but they get good reviews. It is a lovely setting, right out to the lake in the center of town.

Seito's is good, I have been there. Erik! Corner of Turkey Lake and Conroy is Fuji Sushi. (Five minutes from UO) Good Sushi, medium on style, but the food is GOOD!!!!

If I had wanted to I could have ordered in Japanese. You don't get the fish smell walking in (a signal to me to run!) and it's one of the better sushi places in the area.

The cost starts at $95/person with wine pairings being an additional $50/person unless you share. There are additional cost items for each course such as caviar, fois gras, kobe beef, etc. It is not too difficult to drop $400 for your meal but in MHOP, worth every cent. I believe they start taking reservations at the 120 day mark.
 
$400 is a lot to drop, especially since I have been out of work with a chainsaw injury....ironic if you think about it......But I may try to scrounge up some pennies for that.
Thanks everyone for the suggestions. Anyone know how Moon Fish is? I've seen ads all over town, but havent heard anything about it. I myself am not a Sushi eater, or seafood for that matter....blasphemous I know seeing how I was born in Florida and the rest of my family is the reason Snook now has seasons, and Sea Turtles are endangered.
I just want her to walk into some place and say "wow"....
Victoria and Alberts is looking like the winner, but I'd rather stay just a little shy of that....so I can spend more money on her rock, the shiny kind, not the.....well you get it.
