Need new places to try?

Have you ever sat down and made a list of every place you have ever eaten at WDW? I'm going down there solo in May and would really like to try places I've never eaten before. I have the DDE card and would like to eat mainly at places that accept it. I also have an AP, won't be doing the parks commando, and don't mind leaving the parks to go to resort restaurants. I just sat down with the AllEars list of restaurants and was really surprised at all the places we've eaten. Please help me go nine days in May eating only at restaurants I've never tried. Anyone up to planning 17 meals (lunch and dinners)? .

I've eaten at the following:

AK: Flame Tree BBQ, Pizzafari, Rainforest Cafe, Restarauntosauras, Tusker House (and will eat at the new Tusker House in Dec).

MGM: 50's Prime Time, Brown Derby, Mama Melrose, Sci-Fi, ABC Commissary, Flatbread Grill, Starring Rolls, Backlot Express

Epcot: Coral Reef, Sunshine Seasons, San Angel Inn, Akershus, La Kringla Bakeri, Biergarten, Sommerfest, Nine Dragons, Alfredos, Liberty Inn, Tempanyaki, Marrakesh, Tangerine Cafe, Chefs de France, Boulengerie Pattissere, Rose & Crown, Yorkshire County Fish Shop, Le Cellier

MK: Tony's Town Square, Casey's, CRT, Crystal Palace, Pecos Bills, Liberty Tree Tavern, Columbia Harbour House, Pinocchio Haus, Cosmic Rays

DTD: Cap'n Jack's, Fulton's, Earl of Sandwich, Wolfgang Puck Express, Planet Hollywood, McDonald's, Raglan Road, Bongos, Wolfgang Puck Cafe, House of Blues

The ones I've come up with for my May trip are: Yak & Yeti, Toy Story Pizza Planet, Cantina de Angel, Lotus Blossom Cafe, Tokyo Dining, Yakitori House, Main Street Bakery, Plaza Restauraunt, and Mara's. Are these any good and can someone come up with eight more? I'd like to do only one signature restaurant, but may have to do more. Which is better: Narcoosse, Citrico, California Grill, Flying Fish, or Bistro de Paris for my signature meal? Anyone up to the challenge? What are some good places that I've never tried? CS or TS, doesn't matter!
 
We haven't been to Toy Story, Mara, or any of the others you selected. But we've done all the Signature options you gave, and of those I'd do
California Grill. Nice view, good food and service.
In order after that, Citricos, Flying Fish, Narcoossee's and Bistro.
 
DH and I eat at Olivia's every time we go to WDW. The food is good. It is usually not crowded, and is a quiet change of pace. Sometimes we take the boat from Downtown Disney, to make it even more special.
