Need "main dish" idea for a luncheon!!!

I need a "main dish" recipe for an inservice day at work tomorrow. I have no idea what to bring. I am not a big chef. I would like to bring something good, but no too difficult either. Please help me!

When DH needs a dish I always put a boneless pork roast in the crock pot with barbeque sauce. All you have to do it cook it overnight, shred it in the morning and put it back in the crock pot on warm. This way it stays warm until the gathering. Course I also supply buns for those that want to eat it as a sandwich...good luck.
 
Stouffer's makes a great vegetable lasagna... it's always a hit here.
 
is this a potluck? are other people bringing things too?

Things that I bring to potucks that are always hits - big yummy tossed salads (throw in some interesting ingredients), a fritata.... I have a few others if neither of those are good
 

4 cups cooked chicken (diced)
2 cups chopped celery
1 cup sliced water chestnuts (drained)
2 cups cubed white bread (about 2 slices)
3/4 cup mayonaise
3/4 cup cream of chicken soup
4 tsp. chopped onion
2 Tbls. lemon juice
1 tsp. salt

Combine all ingredients and place in a greased 9" x 13" pan. Top with:

1 cup grated cheddar cheese
1 cup crushed potato chips
2/3 cup sliced or sliver almonds (skinless)

Bake at 375º for 20-30 mins. Serve warm. Can be eaten on a soft roll as a sandwich or alone.
 
We have a chicken casserole that is always a big hit-

Boil 3-4 good sized chicken breasts - I've also grilled or baked them with no problem - for about an hour, then shred the chicken.
Melt one stick of margarine in a large casserole dish. Mix one can of condensed cream of chicken soup, one can condensed cream of celery soup, and a small can of evaporated milk. Add the shredded chicken and pour into casserole dish. Prepare two boxes of Stove Top Stuffing and spread over the top. Bake 350 for 30-40 minutes.

I work at a preschool. Some teachers have to bring a "main dish". Others bring sides, salads, or desserts. So, there will be around 8 to 10 people bringing main dishes, all different things.

Thanks to everyone for their ideas.:flower: I have to make a decision before I go to the grocery store in a few hours. Nothing like last minute planning. I would never wait this long to plan a Disney trip. :rotfl:
