That looks like a pretty good list! Have you tried making bingo cards listing one item in each square? We make a bunch of different ones on the computer with the items randomly place in each block and print out several copies of each to play while in the car. We play only the first person to see the item gets to mark it on their card, so if you have the item also you have to find it yourself and be the first to call it. Once someone wins a regular bingo, we play cover all.

Wow, that's a good list already!

how about...

a cat on a porch, or in a window, of a house you pass
a college car window sticker (take your pick which one)
a "been there, going back" Disney liscense plate holder

i'd add more easy ones so they don't give up. and maybe listen to some cd's.some of the cd's could be markers. easy landmarks might be cows , mcdonald's golden arches, hardies, first girl in a bikini, first guy in swim trunks, first one to collect a state road map, first one to collect a tourist brochure , first one to collect the pizza yellow pages from the book assuming there is a book. also at truck stucks they have video games.... why not play one vidioe game ... first one to win, comes back with the prize for their team.
try to incorporate being physical for a few mins .... it helps with all that pent up energy.
