Need help finding something new

Hey all, visiting the world in October with my parents and they've put me in charge of ADRs. So far my plan prior to actually making my reservations (July 5) is:

Saturday: Dinner Tutto Italia
Sunday: Dinner Boma
Monday: Dinner Fantasmic Brown Derby (Would switch sunday and monday depending on when fantasmic was shown)
Tuesday: Rest Dinner Wolfgang Puck Express OOP
Wednesday: Dinner Kona
Thursday: Dinner Le Cellier
Friday: Home

At this point I don't know that I want to deal with the Fantasmic package, because of the schedule not being posted and all the problems people have had with finding seats even with the package, but I've always wanted to eat at Brown Derby. I think I'll do Chefs de France for one of he meals but that leaves me with another adr. Anyone have a favorite restaurant? Maybe in MK, Monorail, or Epcot resort areas? Any suggestions or comments about my plans that I already have?
