Need BUDGET friendly Superbowl recipes

Hi budget friends.. need help for some NEW budget ideas for Sunday's game.. we are having about 15-20 adults and a bunch of little kids (ages 10 and under)

I'm looking for some cheap eats... any ideas????

One of my families favorite party snacks is a yummy sausage dip.
1 roll of sausage
2 packages of cream cheese
1 can of rotel

Brown the sausage and remove from pan to drain. Add cream cheese to pan to melt, mix in Rotel (do not drain) and add the sausage back in.

We eat this with corn chips. It's really good, although it's not very healthy. But it's a nice treat once in a while.

Everyone who has tried it has loved it.
 

I am in the same boat. Not so many people, but I want some cheap snacks!

I am thinking about a popcorn "bar" Popcorn is super cheap. I have an air popper so I plan to make plain popcorn and then set out things like parmessan cheese, old bay, cinnamon sugar, butter,hot cocoa mix, ranch dressing mix ect then everyone can make thier own mix. popcorn::


Im also thinking SUPER sized "chicken drummettes" Wings are so expensive. But drumsticks arent! So.. I will probably fry some up and make them into really big buffalo "wings" I dont see why they wouldnt be pretty tasty.

We also LOVE "heart attack dogs" Take a cheese hotdog and place it cold into a bun. Wrap the whole thing in a slice of bacon and bake at 350 until the bacon is crispy. They are SO SO good.
 
How 'bout making some yummy hot dog sauce and serving it up over hot dogs and fries. Frozen fries are cheap and yummy drenched with sauce and cheese.
 
Chili Dip:

1 Can of No Bean Chili (Turkey Chili is fine)
1 8oz block of cream cheese leave out to soften ( I use which ever is on sale)
about 1-1 1/2 cups of shredded cheddar cheese or taco seasoned cheese (again I use whatever is on sale, any flavor is good)

In a microwaveable dish spread the cream cheese, spread chili on top of that and sprinkle the top with the shredded cheese. Place in microwave for 3-5 minutes (depending on your microwave). Serve with tortillia chips. I can't make enough of this, everyone eats it up!!


Artichoke Spread:

Preheat oven to 350 degrees
1 can of Artichoke Hearts, chopped
1 cup mayonnaise (fat free or low fat is fine)
1 cup of grated parmesan cheese
1 loaf of french bread, cut in half

Mix first 3 ingredients together, spread mixture onto bread and toast in oven on a baking sheet at 350 degrees for about 15-20minutes or until lightly golden brown. This can be filling but is very good!

Ingredients
1 medium onion (about 1 cup diced)Fresh Parsley (about 1/4 cup chopped fine)1 1/2 90% lean ground beef
2 garlic cloves (pressed or diced)
1 tsp salt
6 slices American Cheese
24 hamburger dill pickle slices
8 hot dog buns



Directions
Preheat oven to 450°F. Finely chop onion and parsley using Food Chopper. Combine beef, onion, parsley, garlic pressed with Garlic Press and salt in Classic Batter Bowl; mix well using Small Mix ‘N Scraper®. Press beef mixture evenly over bottom of Large Bar Pan. Bake 10-12 minutes or until beef is no longer pink.


Meanwhile, on Cutting Board, cut cheese into quarters; set aside. Slice buns apart neatly at seams using Utility Knife (do not separate tops from bottoms). Trim about 1/4 in. from each bun end to square off ends (discard trimmings). Cut buns into thirds for a total of 24 square mini buns; set aside.


Remove bar pan from oven. Pour off juices, if necessary, and place on Stackable Cooling Rack. Cut beef mixture into 24 squares using Pizza Cutter. Top each burger with one pickle and one piece of cheese. Place one bun top onto each burger; top with one bun bottom. Cover bar pan with aluminum foil and bake 3-5 minutes or until cheese is melted and buns are warm.


To serve, place one burger with bun top onto one bun bottom using Mini-Serving Spatula. Repeat with remaining burgers and bun bottoms. Serve immediately.



Yield: 24 mini burgers

TIP: Trim buns into thirds. You don't have to make the ends perfectly square unless you want to. Enjoy. I made them for last year's Super Bowl and they were a big hit. Very simple. You don't really need Pampered Chef items. Just spread ground beef on a cooking sheet to bake. Use a pizza cutter to cut into 24 squares. Trim hot dog buns into thirds. Too easy!!!!
 
Pasta and sauce is one of the cheapest options around. I recently bought pasta and sauce for 77 cents each! I think it's cheaper than making it myself (if you don't mind jar sauce). The only thing to add would be mozzerella cheese and bake. It's a nice way to round out whatever else you serve.
Also, I would never go to a party without offering to bring something. Have an idea of what people can bring to lessen your cost (if they offer).
 
Meatballs are usually pretty cheap for a large crowd....Buy a large bag of frozen meatballs, add them to a crock pot with a sauce you can usually make with ingredients you have on hand

Or, again, with the meatball idea, you can do meatball subs. Warm the meatballs with tomato (spaghetti) sauce, add meatballs to a sub/hoagie roll, top with cheese. Easy, cheap, and good!

Another cute appetizer is a (raw) veggie pizza:

Get a pizza crust and roll it out and bake it.

Once cool, spread ranch (or other) dip on it.

Top with raw chopped veggies and cheese.

So yummy and your veggies stretch so far this way...

I would make dips for the apps since you are doing a real dinner for everyone.

Jalepeno jelly over softened cream cheese

Buffalo chicken dip

chili cheese dip



Make up a few different dips with a couple bags of chips and boxes of crackers. You could do a raw veggie tray if you wanted but since you are doing a salad. I would make a BIG bowl of salad and put it out with the apps just put lots of things in it.

For dessert, make your own ice cream sundaes(use the small style styrofoam cups) with vanilla ice cream and a couple of toppings or bake generic cupcakes and let everyone decorate their own with a couple different icings.
 
-Chips and salsa
-Crackers/cheese/salami
-Pretzels with onion dip (made with onion soup packet and a tub of sour creme)
-Little smokies in BBQ sauce

It's probably too late this time around but next year why not tell your guests it's a potluck party and have everyone bring a dish?
 
I just found this on another thread.. i think I might try it:

Slow Cooker Buffalo Chicken

2 lbs boneless, skinless chicken breast
1 bottle buffalo wing or hot sauce ( I use either Red Hot or Steve and
Edy's)
1 packet Hidden Valley Ranch Salad Dressing mix

Place chicken breast in crock pot, sprinkle dressing mix over chicken and
pour wing sauce on top.

Cook 6 - 8 hours for frozen chicken breasts or 4-6 hours for fresh chicken
breasts.


OR a baked potato bar... I'll just bake them in the oven and then put out some sour cream, cheese, bacon and chives... My only problem is that with 40 people (kids and adults) I dont know how many potatoes to make?
 
I might do a hot dog bar. Hot dogs with all the different types of toppings: chili, cheese (grated and "nacho"), onions, relish, etc.
 
My aunt makes these every year for Christmas. Everyone loves them (she makes a sausage one too but it requires a lot of ingredients and I can't remember them all :) ).

Chicken Ranch Wontons

4-5 boiled chicken breasts
8 oz. jar of ranch dressing
package of wonton wrappers (usually found in the produce section)
shredded cheddar cheese
salsa (optional)
sour cream (optional)

Take a muffin tin and spray with cooking spray. Put a wonton wrapper in each muffin hole (I couldn't think of a better word for it :) ) so that the edges of the square (of the wonton wrapper) come up the sides. Bake in a 350 preheated oven for 5-8 minutes (not until golden brown as you will be baking them again later, you just want them not to have soggy bottoms and to stay crispy).

Take boiled chicken breasts and pulse in a food processor with ranch dressing (although you could certainly chop up the chicken breast if you don't have a food processor or deal with getting it out/cleaning it). Add salt/pepper to taste.

Scoop a spoonfull of chicken mixture and place in the middle of the baked wonton wrapper (still in the muffin tin). Place shredded cheese on top and bake until cheese is melted and the edges of the wrapper are nice and golden brown, about 8-10 minutes. These are great hot or room temp. They easily come out of the muffin tin. Place a jar of salsa and/or sour cream for people to spoon on top of their wontons. The best part is you can eat them with your hands (that and they're super yummy!).
 
This is a great dip for chips, and it's pretty cheap to make in large quantities!

Texas Caviar
1-2 finely chopped jalepenos, depending on your spice preference
Two 14oz cans of black eyed peas, drained
2 finely chopped medium tomatoes
4 finely chopped green onions
4 minced cloves of garlic
1 finely diced red pepper
1 small finely diced onion
3 finely diced celery stalks
1/2 cup chopped parsley
1/4 cup chopped cilantro
8oz of a basic oil and vinegar type salad dressing

Mix together and serve with tortilla chips for dipping! It's chips and dip, but a more filling version!


This is my all time favorite pasta salad recipe. I don't have exact amounts for anything, I just eyeball and adjust to my tastes.

Lemony Lentil and Pasta Salad
Dried lentils, rinsed and sorted, and cooked til soft but not mushy
Mini seashells pasta, cooked al dente
finely chopped celery
grated carrots
fresh Italian parsley, chopped

Mix all of those ingredients with a dressing of:
Lemon juice
salt
Olive oil
minced garlic - remember it's very strong when not cooked, so start with 1 clove and add more if you want.
hot pepper sauce - a few drops, or more depending on your tastes.
 
My budget friendly ideas this year started with me taking a Freezer / Pantry inventory.
If I already have it onhand - its no cost right! ;)
So I took what I have onhand and formed my recipes around that.

I need 5 whole items from the grocery store this week and
I have a minimum of 4 nice appetizers and one nice dessert planned.

Now that's Super Bowl on a budget!! :thumbsup2

Here's my menu:

Ranch Sausage Cups
Cheese and Crackers and sliced deli meat
Warm Crab Dip
Goat Cheese Tarts
Cinnamon Fudge Squares

Here are some more things I can set out if needed without any additional groceries:

Chips and Salsa
Pretzels / nuts
A Digiorno pizza - cut into smaller squares
I have a pack of those new Pillsbury Pastry bites
And I have a pack of those Tyson Anytizers
