We're going on our annual beach vacation in a few weeks and what I usually do is cook and freeze a lot of things before we go. Right now I have 10 pounds of snow crab thawing in my fridge. I got it on sale at Albertsons for $3.99/pound. Tomorrow my husband and I will crack it and freeze it in individual bags.
One day I'll prepare crab cake stuffing and make a couple of trays of stuffed shrimp. The day before we leave I'll make Hollandaise to go with them. Another day I'll make a shrimp and crab caserrole in a sherry sauce. That's three nights of just thawing and heating.
The day before we leave I'll also chop parsley, make a seafood dip, a potato caserrole that done with cream cheese , butter and sour cream, and do as much prep work as I can for the things we'll make with the fresh shrimp we'll buy, including a rum pineapple marinade for grilling. We'll take frozen lobster tails for grilling, too. I also bring along frozen crawfish and fettucine to make Crawfish Monique. Easy yet elegant.
While we're at the beach I like to do that's night's dinner's prep work during the hottest part of the day, then just bake or saute whatever we're having. The new frozen vegetables that steam in their own bags are great, as are rice mixes, and bagged salads. We don't eat meat but if we did I'm sure we'd be grilling steak. I noticed our Publix has it on sale for $6.99/pound!
