The tickets only go up to 10 days. For 11 days, you would either have to buy a 10 day + 1 day (That would be $345 if you get them as hoppers), or an annual pass.

If you buy the 10 day ticket with the plus options, you will get 6 entries to the water parks, Disney Quest, Pleasure Island. You may find that 10 days in the theme parks is enough, if you plan to take a few days for water parks, DTD, staying at the resort or do something else.
Unless you decide to go for the annual pass, I would just get the 10 day ticket with 6 plusses, and wait to see if you want any extra theme park days at the end before buying a 3-day ticket. You may also want to do things like golf, mini-golf, rent boats or other options on those 3 non-park days.
There are ultimate tickets for 14 days or 21 days available to UK & Ireland. It might be worth calling Disney to see if you can avail of one. I really don't know if you absolutely must be residing in UK/Ireland to purchase one or if in reality anyone can buy one. I do know that they're not available at the gate, they must be purchased in advance. As people from here tend to visit WDW for longer (due to flight costs/time) they are marketed here but perhaps they're legal for anyone, if that makes sense.
