My homemade corn chowder needs somethin'?

I made a crock pot of homemade corn chowder and it's good, but it needs something. I like spicy and so I'm thinking either hot sauce or a can of chilis, just something to give it a kick of flavor.

Thoughts or experience of something I can throw in there next time??
 
When you have a recipe that "needs something" always start with a touch of salt.

Is it salted to taste? Yes? Then go on with what you are trying to create.

Spicy? Add what you like to make it so. Savory? Have any bacon? Cook it up crisp, crumble it very fine and add to the chowder.

Does it need a pat of butter? A touch of cream? Is it bland, or is it thin, or is it...

You get the idea! Where do you want to go with the chowder?
 
I like a little cayenne pepper in my chowders - just a touch, because I don't really like things very hot, but a little kick is good.
 
Hot sauce & chilis :thumbsup2 Start with the chils and then add the sauce as needed, depending on the heat you want.
I love my corn chowder spicy, I wish I was coming to your house for dinner.

Did the S&P thing, still missing something. It has butter and 2 cups of milk in it so it's good there, but yes, it's bland. You may however be on to something with the bacon. Might have to crumble a piece or two next time I reheat a bowl! Thx.

Sure, here goes:

1 can (32 oz) whole kernal corn, drained
3 medium potatoes diced (I left the skins on)
1 onion, chopped
2 cups chicken broth
2 cups milk
1/4 cup butter

Combine corn, potatoes, onion & broth in crock pot and cook on low 7 to 9 hours

Puree 1/2 of the soup in blender, return mixture to cooker and stir in milk and butter. Cook on high for another hour. Note. After this hour, I then vented the top and cooked on high for another 30 minutes or so to thicken it up a little more.

Like I said, I added S&P when I had the first bowl, but it still needs something. I am going to try crumbling bacon in my next bowl and the next time I cook it from the start, I'm going to try the can of chili's and then go from there.

I always start with bacon so that would be what I added next. I also use a little lemon pepper. It adds a lot. I would use creamed corn as well as whole kernal corn and a pinch of sugar.
 
I was gonna say bacon even before I read the recipe! Everything's better with bacon! ;)

I wondered about creamed corn (and actually had a can or 2 on hand)....might be a little sweeter. I may be making a few more batches of this stuff before winter is over :)
 
bacon, chilis and hot sauce. I would probably add a bit of curry powder but I love that stuff! It adds intrigue.
 
The cayenne pepper or chili powder would be great. So would bacon, chili's and creamed corn. I would also saute the onion in bacon grease.
 
We love corn chowder but I do not make it often because I put not too healthy cream, butter and bacon it it. If you really want to make corn chowder without counting calories start with bacon. Saute your onions in the bacon fat and then add the milk, cream and seasonings. Add the creamed corn and frozen corn kernals at the end.No matter how you pare the calories down, try to saute the onions to get tne most flavor out of them. If you do not want bacon fat use the dried bacon you can find at Costco. It is cooked and almost fat free. A pinch of sugar will bring out a lot of flavor as will a pinch of salt. Corn is a lot like shellfish. it takes salt.

I love corn chowder! It was on our Christmas day menu because I usually do not compromise with the cream and butter so it is special.
 
thanks for posting recipes and tips......DH and I had corn chowder years ago in NYC and I've never been able to find a good batch since......maybe I'll try some of these recipes!
 
I think I would have added cumin, and some green chilis. Would make it into a tortilla soup--Yummy
 
My recipe actually calls for sliced sausage, I use Hillshire farm lowfat, but I saute it in a little butter. It also calls for cream of corn instead of whole kernel and I season with Natures Seasoning salt. I use cream of potato soup in mine! Need to make some this week. :)

I have a corn chowder recipe, and it calls for cayenne pepper Adds a nice kick! Also some red bell pepper would add a nice depth to it.
