My ADRs - feedback? And Akershus or Coral Reef for lunch?

We'll be at POR Thursday through Sunday afternoon solo with free dining, and my in-laws join us late Sunday night, no free dining after that. So my ADRs currently look like this:

Thursday - lunch at Sci-Fi
Friday - breakfast at CRT (before park opening)
Saturday - breakfast at Tusker House (before park opening)
Sunday - open
Monday - lunch at ??? - Pirate and Pals Fireworks Voyage at 6:45PM
Tuesday - breakfast at CM
Wednesday - breakfast at CP (before park opening)
Thursday - open, leave at 1PM

I'd love some feedback on these. I know we're doing mostly breakfasts, and that is by design. I honestly get too stressed trying to make it to a lunchtime ADR, and I don't like having to hang in the park (or, worse yet, bus it back) for a dinner ADR if we want to leave. Thus, for dinner we'll do CS at a park or Earl of Sandwich or WPE or something until the in-laws join us. Once they come in, we'll be at BLT and my plan is to make dinner a couple nights, and maybe add one nice dinner at GF (Citricos or Narcoossee's) or WL (AP) since they are fairly easy to get to from BLT.

For the Monday lunch, I have read the reviews for both Akershus and Coral Reef on allears, and I have been trying to decide what to do. The background story is that, on this day, we'll be changing resorts and so we want a sit-down lunch so that grandma and grandpa have a little down time rather than go-go-go, as we have no hotel room to return to until at least 3PM. I believe we will be in Epcot that day (and heaven help me if I'm wrong on that, I don't know what we will do!), thus I am trying to find a good place for lunch that will be entertaining for our kids. I can get Le Cellier, but I know they really won't enjoy that a whole lot so I've sort of opted not to try for that.

So, help me decide - we have DD 6, and DS 8, as well as me, DH, and my MIL and FIL. Which would you do for lunch on Monday?

And would you do a nice dinner for the last night perhaps? Which restaurant would you choose? We're doing tons of character stuff, so I definitely want a non-character meal that last night, if anything. :thumbsup2
 
We have eaten dinner at Coral Reef three years in a row and loved it each and every time. I know you said you were wanting a lunch reservation but I would still choose Coral Reef. The atmosphere is very cool with it looking like you are under the water and the sharks, sting rays and other assorted fish swimming by.
 
Biergarten would be entertaining for the young ones and they have a pretty good lunch. However, if you want a quiet meal with folks, this would not be the place. It is lively!
