my 11 yr old GS will only want Kid meal options

I really hope this won't be an issue. We will only do 2 Table service meals and after researching I am absolutely certain Kid's meal will be what he wants, what he will eat. Honestly, have guests ever been told NO?

ALSO, if I was told NO, I think I would either ask for the manager or just order a dessert ( which is not what I want to do)
 
If you're paying out of pocket (not on the dining plan), it shouldn't be a problem at a disney managed restaurant. It might be an adult portion of what is on the kids menu though.

If it's run by another group (like a number of Epcot restaurants) they tend to be stickier about who orders off the kids menu.

If it's prix fixe, you'll pay the adult pricing.
 
Just be prepared to maybe pay more, sometimes they’ll allow a straight up kids meal and sometimes it’s a bigger portion kids meal at a higher price.
 

My wife and I frequently order from the kids' menu, and no one has ever said anything about it, even at table-service restaurants. We have also split a single adult meal without issue.

We’ve never experienced this before. We order a kid’s meal, and that’s exactly what we receive. I guess it could have happened and I didn't pay attention to the price since the cast member never said anything.

However, he can eat the food he likes at a buffet, whether the kids food or the adult food, so maybe that would be a win? I didn’t get the feeling the OP was trying to dodge the adult cost, but was trying to find something an 11 year old would eat.
 
You'll be fine. Our 11 year old has never once run into an issue.

As others have said, just know that for pre-priced meals, like buffets and dining show packages, you will get charged the adult price.
